Coronato Pizza — the first business in Carrboro’s South Green shopping center — is opening today.

The new restaurant from chef Teddy Diggs will specialize in Roman-style pizzas. Coronato’s website gives a more detailed description of Roman-style pizzas:

Pizza dough in Rome is rolled very thin and the addition of extra virgin olive oil into the dough gives the crust more weight, flavor, and a crispy cracker like crunch. Roman style pizza dough is also relatively low in hydration (the higher the hydration then the wetter the dough, the wetter the dough then the softer and more flexible finished crust will be.) Therefore, Coronato’s crust is thin, perfectly blistered and crunchy.

Diggs was a longtime chef at Chapel Hill’s famous Il Palio, but left last summer to open Coronato Pizza in Carrboro. He began working locally after time in Washington D.C. Diggs was named one of 16 Chefs to Watch in 2016 by Restaurant Hospitality.

Coronato will be open Tuesday through Saturday from 5 to 10 p.m. and Sundays from noon to 9 p.m.
