Meital Cohen and her family moved to Chapel Hill in 2020, and it didn’t take long for her to start baking for the community. Having graduated from the French Culinary Institute and worked for more than a decade for the Westville Restaurant group in New York City, she began selling hit recipes, catering requests, and special cake designs from her home off Abbott Place as Even Dough Bakery.

Now, though, Cohen is preparing to take the next step for her business: a brick and mortar location for patrons. And she will be doing it in a space familiar to many downtown Carrboro travelers.

Even Dough Bakery recently announced Cohen bought the property and building at 203 West Weaver Street in Carrboro — the former space of Mosaic Tapas Bistro & Wine Bar and the restaurant Provence. The sale was made by BOLD Commercial Real Estate.

“My journey began with a passion for creating delicious treats and the dream of sharing them with our community,” Cohen wrote on Even Dough Bakery’s Facebook page on January 31. “Now, thanks to your unwavering support, I’m ready to expand and offer you an even more enchanting experience.”

Presently, Cohen receives orders from her business’ website, bakes the orders at home, and offers pick-up or delivery. Even Dough’s menu is full of all types of baked goods: tarts, cakes, babkas, cookies, and pies. The bakery’s social media page highlights elaborate cake designs and decorations requested from Cohen, who also offers boxes of assorted sweet treats.

Even Dough will eventually move its operations to the space, which is known for its outdoor seating and garden area. The space is still equipped for the restaurant that came before it, with Cohen telling Chapelboro renovations will be needed and she hopes to open to in-person customers later in 2024. In the Facebook post, she said the plan is to create a “cozy café” and to offer baking workshops in the future.

“This exciting venture wouldn’t be possible without each and every one of you who believed in my little business,” Cohen wrote. “Your support has been the secret ingredient in our success, and we can’t wait to share this new chapter with you.”

Cohen confirmed to Chapelboro that, for now, nothing is changing with Even Dough’s operations. Orders can still be placed on all menu items and she will continue operating the bakery from her home before transitioning to the West Weaver Street space during the summer.

Mosaic opened in 2021 as a new concept from owner and chef Baptist Knaven, but closed in early 2023 with Knaven citing challenges like the COVID-19 pandemic’s affect on business and inflation of goods. Prior to being known as Mosaic, the space housed the French cuisine restaurant Provence, which opened in the early 2000s. According to BOLD Commercial Real Estate, the building before that was used as a residence and was originally built in 1922.
