Michelle and Stevie Webb, the founders and owners of the Carrboro-based business The Cheese Shop, have shared renderings and a name for their new location. The Wedgewood Cheese Bar will be located at 100B Brewer Lane in Carrboro in a 2,000-square-foot space inside the Carolina Car Wash Building. The move was first announced in November of last year.

“We’ve been able to do a lot with a little over the past couple of years, but with Wedgewood you’re really going to see our vision and experience at maximum horsepower,” said Stevie Webb. “We finally have the space and independence to manifest this other-worldly, happy place; an homage to my native Britain and Europe, and other North American places we’ve called home. I’m looking forward to being your rather enthusiastic tour guide.”

Currently, The Cheese Shop occupies an 80-square-foot counter space located inside Glasshalfull at 106 South Greensboro Street. A release describes Wedgewood as “a complete reimagining” of The Cheese Shop, which will be North Carolina’s “only stand-alone, chef-driven cheese bar.”

“Wedgewood’s menu will take a farm-to-bar approach, featuring a curated collection of small players that showcase local, seasonal produce, and the world’s best cheese and cured meats,” the release said.

In addition, the new space will have an upstairs section which can double as an event space for classes, private dinners or tastings. An 18-foot cheese case will provide an area for guests to select wrapped-to-order cheeses and specialty groceries, including bread, fish and spreads.

“Wedgewood started as a tribute to blue and white ​​porcelains of the world,” said Michelle Webb. “Much like countries and regions around the world have their own signature porcelain, they also have distinct cheeses that reflect their culture, terroir, and commerce,”

A local team, including the Durham-based Sundholm Studio and the Carrboro-based Jim Spencer Architects and Stillcraft Building Company are working with the Webbs on the project.

According to the release, The Cheese Shop’s original location in Glasshalfull will remain open through 2024. Its current hours are 12 to 7 p.m. on Monday, Wednesday, Thursday and Friday and 11 a.m. to 7 p.m. on Saturday.

An opening date for Wedgewood has not yet been specified.
