The Carrboro business scene lost one of its mainstay restaurants last week, as Mosaic Tapas Bistro & Wine Bar permanently closed its doors.

The West Weaver Street restaurant and café known for French cuisine and a variety of share-able plates shared a post on its social media Thursday, January 18 saying it would not re-open. A post on the bistro’s website said its closure began on January 14.

“The last three years has been a true challenge for all of us,” reads a Facebook post signed by Chef Baptist Knaven. “Add the rising inflation, and with that the increase of both food and labor cost, and a shortage of staff, a small restaurant like ours is just not sustainable.”

Located in a renovated mill house, Mosaic opened in the summer of 2021 as a reimagined concept from Knaven. The space had previously been the French fine-dining restaurant Provence, which opened in 2002, and Knaven bought the business in 2012. Mosaic’s website described its new vision as being focused on building community over plates with global flavors, created with local and sustainable ingredients.

“I would like to thank all of our patrons for their support, and all of our staff for their work,” wrote Knaven. “Mosaic (and previously Provence) has been a community that has given us all a lot of memories. Be well, be prosperous, be kind to one another, and support each other.”
