This weekend I went into my own kitchen to test out a Mr. Food recipe, the Unbeatable Veggie Burgers, from The Ultimate 30 Minutes or Less Cookbook

I have to admit these were the best veggie burgers I’ve made from scratch. I put my own spin on the recipe but the mix of fresh broccoli, corn, red onion, portabella mushrooms, and black beans were the perfect combination for some really tasty veggie burgers. The consistency of the burgers are similar to the meat version of America’s favorite food.  I had a little trouble with keeping the burgers together while cooking, but it didn’t really matter once I tried a bite and proceeded to eat two burgers myself.

I topped my burgers off with a cilantro jalapeno spread, a perfect spicy condiment (recipe below). You could also use this spread as a dip or salad dressing.

Unbeatable Veggie Burgers

Ingredients:
1 cup of fresh loosely packed cilantro, stems removed
1/4 cup of diced pickled jalapeno peppers (use less to tone down the heat)
1/2 cup of  non-fat Greek yogurt
1/2 of an avocado
1 tsp cumin
pinch of garlic salt
1 tbsp fresh lime juice

Directions:
Blend all ingredients in a food processor until creamy.

*Add a 1/4 cup of olive oil to thin the spread and use as a salad dressing.
