“Make It Snappy” is presented by Goldfish Swim School of Chapel Hill. With recipes that only take 45 minutes or less to prepare, Christy helps you stay afloat at dinner time!

‘Tis the season of chaos at our house! For a family with three kids that runs a candy business, December is a constant whirlwind. We are working around the clock to fill toffee orders, so meals need to be speedy and so simple they require no thought whatsoever!

That’s where my Chicken BLT Caesar Naan flatbreads come to the rescue. It’s a few minutes of chopping plus a couple of minutes of heating and dinner is on the table! We’re leaning hard on the grocery store for this meal, with packaged Naan, Caeser dressing and my secret weapon, premade chicken tenders (available in the deli department). The Naan flatbreads warm up in no time, and following the microwave cooking directions on the bacon package will save you tons of cooking time and cleanup!

The best part about this recipe is that it also doubles as an appetizer to share at holiday parties! The red bacon and tomatoes coupled with the bright green lettuce give it a fun and festive flair perfect for your upcoming celebrations!

INGREDIENTS

  • 4 slices of bacon
  • 2 TBSP olive oil
  • 4 packaged Naan Flatbreads
  • 8 precooked chicken tenders, chopped*
  • 1 jar creamy Caesar dressing**
  • Romaine lettuce, chopped

INSTRUCTIONS

  1. Preheat the oven according to Naan package directions. Place the flatbreads on a baking sheet and brush each with olive oil.
  2. Place the flatbreads into the oven and heat according to package directions.
  3. As the Naan warms, cook 4 slices of bacon in the microwave following the package directions.
  4. Remove the flatbreads from the oven and spread with a layer of Caesar dressing and top with chopped chicken tenders. Put the flatbreads back into the oven and allow them to heat for another 2 minutes or until the chicken is warmed through.
  5. Top the flatbreads with chopped romaine lettuce, tomatoes and bacon. Garnish with fresh cracked black pepper.
  6. Serve and enjoy!

NOTES

*The deli departments of most local grocery stores offer premade chicken tenders.

**We like the Marie’s brand of Caesar dressing, which can be found in the refrigerated produce section near the bagged salad mixes.
