As much as I anticipate the autumnal colors, chilly weather and seasonal produce, I will sorely miss the fruits of summer. In celebration of the upcoming Blue Moon and Labor Day, I put together this simple though tasty tribute to watermelon, sun golds and garden herbs. Cucumbers could be added and to suit your palate, switch out the mint for cilantro. Enjoy!
3 cups seedless watermelon, cut into bite size pieces
2 cups sun gold tomatoes, halved
2 T basil, chopped
2 T mint, chopped
Zest of one lime
Juice of one lime
1 t chili powder
1 t kosher salt
1/2 t black pepper
Chapel Hill Creamery Farmers Cheese, crumbled
Combine all ingredients and toss. Taste and adjust seasoning.
How simple is that? A perfect side for your holiday cookout.
Best served at room temperature.
